Protein Pumpkin Pie

Makes one 9-inch pie (8 slices).

INGREDIENTS

Crust:
1/3 cup almond butter
1/3 cup water
1/2 cup Ultimate Nutrition Clean Whey Protein Powder
1/4 teaspoon ground cinnamon

Filling:
1 can organic pumpkin
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1/2 teaspoon sea salt
1/2 cup Ultimate Nutrition Clean Whey Protein Powder
1 cup water
2 large eggs

INSTRUCTIONS

  1. Preheat oven to 325° F.
  2. In a medium bowl, mix almond butter with water until smooth.
  3. Add in protein and cinnamon. Mix until combined, and then press into pan to form pie crust.
  4. Bake for 10-12 minutes, then remove from oven.
  5. While crust is baking, combine pumpkin and spices, set aside.
  6. Mix whey protein with water, then add to pumpkin and spice mixture.
  7. Add eggs. Mix slowly until well combined, before pouring into pre-baked pie crust.
  8. Bake for 45-55 minutes, until the center of the pie is firm to the touch.
  9. Let cool completely and enjoy!
